Crop in One Year Kqnal to all tlie Groin Usecl in Distilling Ten Tears The claim that the vhisky business uses the products of the farm and creates. a market for corn is the most absurd argument forth, to catch the farmers' support. From reports of the commissioner of internal revenue, on page 58, we have a statement showing the quantities of grain and other materials used in the productfon of distilled spirits during the fiscal year ending June 30, 1890, and the report shows the following figures 2 756.385 bushels Wheat 20,310 bushels Barley 90 bushels Eye 4,512,845 bushels Corn bushels Oats 32.61)0 bushels Mill Feed 41,840 bushels Other material 1,254 bushels Molasses 2,198,5 ,8 gallons Total 25 202,901 bushels The total number of gallons produced was 107,618,120, making the average yield 4.27 gallons per bushel. For the last ten years from 1881 to 1890 inclusive, the total amount of grain used was 213,639,173 bushels, and of molasses from which rum is made, 23,590,218 gallons.

After the grain goes through the distillery to "make bad whisky there is a residue slop which is fuither used to feed cattle. The government is very careful of the distillery business and knows just how many cattle its distilleries feed every year and just how much they gain in weight. The hog too is not forgotten. It likes distillery slop also and is reckoned up in numbers and pounds in the United States reports. On page 62 of the reports for 1890 we find that the different distilleries of the country fed during the fiscal year ended June 30, 1890, 67,173 cattle, and 40,947 hogs, and that these cattle increased in weight 14,984,837 pounds cr an average of 223 pounds.

The hogs increased 3,273,461 pounds or an average of 79 pounds apiece (it will thus be seen the hogs didn't gain quite as much as the cattle). These cattle and hogs it must be remembered were not fed on new corn and hay bought from the farmer to fatten them, but were fed on the slop of 25,202,901 bushels of grain after the whisky was got out of it. Here then, is an increase of 14,984,837 pounds of beef and 3,272,461 pounds of pork from the grain for which the distillery gets money besides its sales from whisky. Every pound of distillery fed cattle and hogs comes into competition with the corn fed and pasture fed cattle and hogs. 25,202,801 bushels of grain make 107,618,120 gallons of spirits and feed 67,173 cattle and 40,947 hogs, giving the distiller besides his profits on whisky 18,258,298 pounds of meat in beef and pork.

This sells all the way from a cent and a half to six cents a pound, thus netting the distillers $547,748.94, with perhaps an addtional profit of half to a cent a pound or even more on the market on every pound or even more on the raise of the market on every pound of the 67,173 cattle and 40,947 hogs. A subscriber to The Lever suggests this ought to be deducted from our table and so we here present it anew 25,202,901 bushels grain make gallons of spirits, which cost the drinker at least $300,000,000, feed cattle and 40,946 hogs, making a clean profit of a half million dollars to the distiller on the simple increase of weight with all the chances for gain upon higher prices than when bought, and the whole of it nets the farmer but $7,560,870.30. Out of the seven and a half million dollars that the farmer gets for his grain used in distilled spirits, the saloons in the United States get $300,000,000. This does not take into account the grain and fruits used in making beer and wines, whose sales swell the to a billion dollars. The reports of grains and fruits used are not published and are not so easy of determination, hence we present no figures here on that line.
