Tor pineapple mousse, make a sirup with one cupful of sugar and quarter of a cupful of water; add gradually the yolks of four eggs, stiffly beaten, beating all the while.

Cook in a double boiler until the custard begins to thicken, then strain and cool, stirring occasionally. Put two cupfuls of shredded pineapple through a sieve and add to the custard; lastly, fold in two cupfuls of cream, stiffly whipped. Pack in ice and eaJt, and let stand several hours to harden. Another dessert for hot weather is pineapple charlotte: Dissolve a tablespoonful of powdered gelatin in two cupfuls of boiling water; add the juice of a lemon, a large orange, two tablespoonfuls of sugar and a little grated rind of the orange. Stir over the fire until the sugar is well dissolved.

Strain over a cupful ol shredded pineapple; pour the mixture into a dish which has been lined with Iadyfingers, and set in the refrigerator to harden. Serve with whipped cream. Pineapple cream also calls for gelatin and is a dessert specially good in hot weather. To make this, dissolve two teaspoonfuls of powdered gelatin in a cupful of boiling water. Add a cupful of sugar, two cupfuls of cooked shredded pineapple, and two table-spoonfuls each of chopped candied orange, lemon peel and cherries.

Whip two cupfuls of cream until stiff and fold into the pineapple mixture; pour into a mold, and put in the refrigerator to harden. Serve with whipped cream and decorate with candied cherries and pieces cf pineapple. M. J. Wells, Managing Kditor AL.

Just why the voters of Douglas countv elected Herman Broeker to the office of County Clerk to succeed one who had been elected by opposing interests the Herald is unable to say positively, but it has a strong suspicion that they wanted a man for the position who had had business training and would take personal charge of the work of the office and make himself familiar with all of its details. The eh an gin order had reached the point when men were to be chosen because of fitness and not to bestow political rewards.

The suspicions of the Herald find support in the record for efficiency which Mr. Broeker has made in the Clerk's office. If he- was not elected because of a promise of efficiency, then the large majority for a candidate of a ninority party needs explanation. Mr. Broeker has proved a very satisfying novelty as County Clerk in that he has mastered the details of his office and is Clerk de facto as well as de jure.

Mr. Broeker has been very generous with his time in public service. At times when congestion comes in the Clerk's office and extra help might be reasonably asked, Mr. Broeker has worked over-time. From 7:30 a.

Whenever an attempt is made to rrdarge the political powers of the people the benefifiaries of special privilege try by every means to block the game. If a bill is introduced in a legislative body to to give the people more power over legislation or power to limit the tenure of office holding, the privileged classes manage in some way to so modify the bill that when it becomes law, it will have lost much of its force. It is said that a "joker" has been added which makes the legislation a joke, indeed. The bill passed by our last legislature providing that a recall amendment to the state constitution be submitted to Kansas voters is a case in point. A joker was introduced which requires that no one shall be permitted to sign a petition for an election to recall a public official, who did not vote for him.

The effect of such a requirement can be readily seen. The friends of an official would be reluctant to ask for his recall. It would be very difficult, if possible, to recall any one. The recall amendment, if adopted, would repeal all recall legislation now in force and we would find that we have no recall law none that can be worked in public interest. We now have a limited recall a recall of limited application which is good as far as it goes.

We do not want to lose what we have without his army of dollars and basks.
